SUMMER RICE SALAD

Ingredients

  • 2 cup(s) MA-HAT-MA white rice
  • 1.5 teaspoon(s) salt
  • 4 cup(s) water
  • 4 cup(s) SPAR gerkins, chopped
  • 2 teaspoon(s) lemon peel, grated
  • 0.5 teaspoon(s) ROBERTSONS ground cinnamon
  • 30 cherry tomaotes
  • 1 cup(s) spring onions, sliced (including green part)
  • 1 handful(s) fresh mint,, roughly chopped
  • 16 ounce(s) feta cheese, crumbed
  • 0 DRESSING: half cup SPAR orange juice, half cup SPAR olive oil, 1 tablespoon SPAR lemon juice

Method

  1. Bring  water, rice, & salt to the boil in a heavy, medium saucepan as per instructions on the packet
  2. Transfer rice to large bowl & cool at room temperature
  3. Add halved tomatoes, gerkins, spring onions, mint, and feta to rice in large bowl
  4. To make dressing,  whisk all dressing ingredients in a small bowl to blend
  5. Add dressing to rice salad, toss to blend. (Can be made ahead; stored in an airtight container in the fridge. Bring to room temperature and toss before serving.)
